While I was havingChey Sua Carrot Cake和Teochew Paufor breakfast at Toa Payoh Lor 1 Food Centre, I noticed the long queue at Lau Sim Shredded Chicken Noodles (老沈鸡丝面). Out of curiosity, Derrick and I ordered two bowls of dry and soup noodles to try. It didn’t quite impress us initially. The mee kia dry was ordinary and comes with shredded chicken and slices of mushroom. The fishball soup had nothing to shout about as well

Richard shared with us that the owners handmade their fish dumplings every afternoon. The translucent skin is made of fish, which they painstakingly grind from fresh fish. The owner has to first debone the fish and knead it till it becomes a thin sheet. And the fillings in the dumplings has a generous taste of grinded fish meat with dried sole fish.
The whole process of mashing and frying the fish meat is so tedious and time consuming, so I really applaud the owners for their persistence in doing these by hand. Each fish dumpling is very plump and filled with the aroma of sole fish. To enjoy the Fish Dumpling or Her Giao, you have to either order the Fish Dumpling Noodle ($3.50) or the All-In (Fishballs + Fish Dumplings) Noodle ($4.50). I had the later which comes with two fishballs and two fish dumplings. As I am typing this post, it certainly makes me crave for it and I will be back for more!

Just tried this store you recommend. I ordered dry chicken noodle with the fish dumpling.
About the noodle: The mee kia is not cooked entirely. So I suspect the soup might not be hot enough. There wasn’t anyone else in the queue, so it could not be a rush-time kind of issue.
About the fish dumpling: The owner put the fish dumpling together with some raw minced pork in my soup bowl, then added some hot soup and then put it on my tray. He did not even go through another round of cooking in his hot soup. It is RAW PORK. How can the pork be cooked with just some hot soup poured over it and the soup is not even hot enough. Disgusted by this scene, I did not even touch the bowl of soup.
Conclusion: Disgusted by how they handled raw food and will not go back again. Will strongly discourage folks to try this unless you have a strong stomach. YUCKS!
